"Cheesy" Hash Browns

 
 

 

Cheesy Hash Brown Casserole

 

"Cheese" Sauce

1 cup onions

2 cups potatoes

1/2 cup carrots

2 cloves garlic

2 cups water

 

Cook above ingredients until soft.  Take off burner to cool for 15 minutes, then blend with:

 

1/2 cup cashews

2 tsp salt

1/2 tsp Dijon mustard

2 Tb lemon juice

 

Blend until smooth and creamy, then combine "Cheese" Sauce with:

 

40 oz. hash brown potatoes (Mr. Dees or Simply Potatoes good store choices)

 

Spread evenly in a 9x13 pan and sprinkle top with:

 

1/4 tsp cayenne

1/2 tsp paprika

black pepper to taste

 

Bake 30-45 minutes at 350 degrees (cover for first half of baking, uncover for second half of baking).
