3 cups shredded potatoes
1/4 cup finely diced onion
1/2 tsp salt
1/4 tsp celery seed
1/4 tsp pepper (optional)
1 tsp chicken-style seasoning
Saute onions for a few minutes to soften, then mix all together and place in sprayed casserole dish (8x8). (Could add optional ingredients to this, such as colorful diced peppers, green chiles, diced celery, or pimentos.)
Sauce:
½ cup raw cashews
2 cups water 4 tsp cornstarch 1½ tsp onion powder ½ tsp garlic powder 1½ tsp lite soy sauce or Bragg Liquid Aminos
Blend all sauce ingredients until very smooth (hint: start with only half the water as the cashews will blend more thoroughly, then when it is smooth, add the remaining water and blend briefly). Pour blended mixture over potatoes. Bake coverd at 375 degrees for 30 minutes. Uncover and bake another 20-30 minutes.
