Waffles, simple whole-grain

Simple Whole Grain Waffles


1 cups regular or quick oatmeal
3/8 cup whole wheat flour
3/8 cup cornmeal
¼ cup wheat germ
½ tsp salt
½ cup soy, rice, or almond milk 
1 cup water 

     Combine all the dry ingredients in a large bowl and stir until well-mixed.  Then add the milk and the water (for this method use water that is quite hot).  Mix batter and allow it to sit for 5 minutes.  Stir it up again then proceed to baking waffles.  The batter may seem a little lumpy, not as smooth as you may be used to.  That is normal.  Spray a hot waffle iron with nonstick spray, then spoon on batter until it covers iron.  Close lid and bake for 10 minutes.  Do not open early.  Makes about 4 average size waffles.

 

    (To add variety, consider adding any of the following to your batter: nuts of any kind, raisins, blueberries, banana, flax meal, almond or orange extract, coconut, etc.)
