1Tb agar-agar flakes 1 cup cashews 3 cups water 1 Tb vanilla 2 cups fresh strawberries, chopped ¾ cup pure maple syrup 1/3 cup canola oil ¼ tsp. salt
Soak agar-agar flakes in 1 cup water. Boil 1 minute, cool 1 minute, then add cashews, and blend until smooth. Add remaining water, vanilla and 1 cup chopped strawberries, liquefy. Add syrup and salt. Blend, adding oil slowly while blending. Continue blending for 1 more minute. Add remaining chopped strawberries. Pour into ice cream maker and process. This is the best way, but if you don’t have an ice cream make, freeze in a bowl or tray. Serve before it gets hard. |
