Very Vanilla Maple Cream Sauce

 

 

Very Vanilla Maple Cream Sauce

 

 

1 cup water

1/2 cup raw cashews

1/4 cup pure maple syrup

2 Tb sugar

2 tsp vanilla extract

1/2 tsp fresh lemon juice

 

Combine first 4 ingredients in blender and process until completely smooth.  Place in small saucepan over medium heat, and cook, stirring constantly for 18-20 minutes until sauce is thick, smooth, and creamy.  Remove from heat and vigorously stir in vanilla extract and lemon juice.  Serve warm or thoroughly chilled.  Will keep 5-7 days in refrigerator.
