Cheese Sauce from Patato

1 cup onions

2 cups peeled and chopped potatoes (red is best)

1/2 cup chopped carrots

2 cloves garlic

2 cups water

 

Combine in a saucepan and cook until soft.  Cool for 10 minutes or so, then place in a blender along with:

 

1/2 cup raw cashews

2 tsp. salt

1/2 tsp Dijon mustard

2 Tb lemon juice

 

Process in blender until completely smooth.
