Creamy Pineapple Topping
1/3 cup raw cashews
½ cup crushed pineapple, with juice
1Tb honey
dash of cinnamon or ginger (optional)
Blend thoroughly until mixture is smooth and creamy. Serve as a topping for baked sweet potatoes. Makes about 1 cup.
