Wild Rice Casserole

Wild Rice Casserole

 
 

 

1 medium or large onion, chopped

1 cup brown rice

1 cup wild rice

1 quart canned tomatoes

1 can black olives, halved

1 cup canned or chopped mushrooms (optional)

1 tsp salt

3 1/2 cups boiling water

1 recipe "cheese" sauce (see below, or use favorite "cheese" recipe)

 

Combine all ingredients in large casserole, gently folding in cheese sauce.  Cover and bake at 300 degrees for about 3 hours.

 

 

"Cheese" Sauce

1 cup onion

2 cups peeled and chopped potatoes

1/2 cup carrots

2 cloves garlic

2 cups water

 

Cook above ingredients until soft, then take off burner to cool for 15 minutes.  Then pour it all in a blender and blend with:

 

1/2 cup cashews

2 tsp salt

1/2 tsp Dijon mustard (or dry mustard)

2 Tb lemon juice

 

Blend thoroughly until smooth and creamy.
