Quick Quinoa Salad

 

 

Quick Quinoa Salad

 

 

3 cups cooked quinoa**

1 can (15 oz) garbanzo beans

2 fresh tomatoes, chopped

1/3 cup fresh chopped flat-leaf parsley

2-3 garlic cloves, minced

1/4 cup fresh lemon juice

2 Tb olive oil

1/2 tsp salt (or to taste)

 

Drain and chop garbanzo beans.  Add cooked quinoa, tomatoes, parsley, garlic, lemon juice, oil, and salt.  Garnish with additional parsley if desired.  Serves 4-6.

 

**to cook quinoa: 1 cup quinoa, 1/4 tsp salt+ 3 cups boiling water; cook covered, on low heat, for 20 minutes.  Cool.
