Quinoa and Black Bean Salad

Quinoa and Black Bean Salad

 

 

3/4 C quinoa

1 1/2 C water

 

Rinse quinoa thoroughly. Bring to boil with water, then reduce to simmer for about 15 minutes until water is absorbed.  Let cool. Place in serving bowl and add:

 

    1C black beans

    1C corn

    1 red pepper chopped finely

    1/4 C chopped red onion

    1/4 C chopped celery

 

Dressing:

 

    Juice of 1 lime

    1 T olive oil (optional)

    3/4 t corriander

    1 t ground cumin OR 11/2 tsp toasted cumin seeds ground in a coffee grinder

 

Sprinkle chopped cilantro and chopped avocado on top just before serving.
