5 cups faux chicken broth 3 Tb soy sauce 1 tsp Italian seasoning 5 Tb vegan worcestershire sauce 3 Tb cornstarch, whisked with a little water 1 can (8 oz) tomato sauce 1-2 cans (15 oz) diced tomatoes 3 cloves garlic, crushed 1½ cups chopped onion ½ cup white mushrooms 1 sweet potato, peeled and chopped 3 carrots, peeled and chopped 2 zucchini, chopped 3/4 cup corn 3/4 cup peas ½ cup uncooked quinoah 3/4 cup uncooked red lentils 1 can (15 oz) garbanzo beans chopped walnuts (optional) 2 Boca burgers, chopped (optional)
Throw everything in a crockpot. Cook at low for 6-8 hours. |
