Ethiopian Bean Stew 

2 Large onions

2 1/4 Tablespoons of Berbere spice (Berbere Spice Recipe)

3 Teaspoons Garlic minced

3/4 Tablespoon Fresh Ginger or Ginger paste

1 1/2 teaspoon Cumin

3 Teaspoons smoked paprika

1 1/2 Tablespoons of Tomato paste

3 Cups of Vegetable broth

3 Tablespoons parsley

Salt to taste

Sautee the spices, onion, garlic and Ginger. Add the tomato paste and Vegetable broth. 

 

Beforehand Soak 1 Pound of a bean of your choice for 24 hours. Then rinse and cook until done. Drain and rinse then add to the soup mix above.
